Description
First author of plays, Philippe Gilbert took over the family estate in Menetou-Salon. Working in biodynamics, it offers this monoceepage of Sauvignon Blanc from a sedimentary clay-limestone terroir dating from Kimmeridgian. Average aged 25, the vines are spread over six plots and ten hectares. The wine is raised in stainless steel tank for ten months. The result is a tonic, fleshy and salin Menetou-Salon-Salon that will sublimate asparagus as well as crustaceans or raw or grilled fish. You can also taste it on goat cheeses or dessert sorbets.
